The folks at the office went out to Thai lunch and didn't even bother to invite me along. Well, there was this email a week before, but as they were preparing to leave, not one even had the decency to poke their head into my corner of the building and ask. Nope, I'm not upset. It was just that I was looking forward to a Thai lunch this morning.
Well, not to be outdone. We had prawns at home, a Tom Yum paste packet, coriander, mushrooms, garlic, onions, chives, tomatoes... why not make my easy Tom Yum fried rice for dinner.
Of course, you guys are not yet into the spice of other cuisines, so garlic butter prawns was the side dish of the day.
To make Tom Yum friend rice, you will need:
500g prawns
2-3 cloves garlic
3 tablespoons olive oil
4-5 cups cooked jasmine rice
1 cup mushroom cups, sliced
3 stalks chives, chopped
half punnet, cherry tomato
1 small onion, chopped
1/2 cup frozen peas
1 cup coriander
1. Slightly cook the prawns in olive oil, about 2 minutes.
2. Remove from pan and set aside.
3. Saute the garlic, then onion in the same pan.
4. Add the Tom Yum paste packet and cook for about 1 minute.
5. Add the rice and stir until well combined.
6. Add the mushrooms and tomatoes and stir until combined and mushrooms are cooked through. Mushroom should have slightly browned but not soft.
7. Add the chives and frozen peas.
8. Return the prawns into pan and slowly stir until combined.
9. Add the coriander leaves as garnish and turn off heat.
10. Add chopped chillies (optional - only if you prefer it really hot)
This dish can be served as the main meal for dinner or lunch. So, guess who's having Thai lunch tomorrow?
